Stuffed Peppers

This is MY favorite!  Again...this is a super easy recipe!  It is even easier if you have leftover steak from earlier in the week!
2 green peppers sliced long way (remove seeds)
Steak sliced thin
Mushrooms, onion & garlic
1 slice provolone cheese
Lightly sautee the mushroom, onion and garlic with the steak in a little coconut oil (assuming it is already cooked & your using leftovers).  I fill 1 red container with steak and 1/2 of the green container with mushroom & onion.  Mix it together.  Stuff it into the pepper and put a slice of provolone cheese on.  Everything is already cooked so now its just a matter of melting the cheese.  Toss it in the oven on 400 degrees until cheese is slightly browned.  If you like a softer green pepper you may cook it in the oven for a few minutes before you stuff it.
This is 1 RED and 1 GREEN

I like to serve this with couscous or brown rice. Which is equal to 1 YELLOW.

Turkey Italian Sausage with Mixed Veggies

1 package of Turkey Italian Sausage
1 small Zucchini
1 Onion
1 Summer Squash
1 Green Pepper/Red Pepper/Yellow
Garlic
Pinch of Salt & Pepper
Cook turkey Italian sausage on stovetop (or grill).  Chop veggies in medium size chunks and add to pan with garlic and tsp full of coconut oil.  Cook until veggies are desired tenderness.

This is a super quick and tasty meal everyone in my house will eat!  Okay...the little one may try to feed some of the veggies to the dog but-she will eat a majority of them!  Sometimes I will shake things up a bit and add some asparagus, mushrooms or tomatoes.
To serve it is easiest to fill 1 red container with meat and 1-2 green container with veggies and dump onto the plate.
